Father’s Day Recipe – Gluten-Free Pancakes

Breakfast in Bed is a time honored Father’s Day tradition in our house.  It started when my oldest was just a babe in arms and I wanted to do something special for my husband on his first Father’s Day as a father. As the kids got older they took over and (with my help) started “surprising” my husband with a homemade and usually delicious breakfast tray served with lots of love.

Things got significantly more complicated when we started a gluten-free diet. There went the waffles, French toast and pancakes. What would we serve for Father’s Day? We started off with an omelette which is pretty standard gluten-free fare but we wanted to do something a little jazzier for our special father on Father’s Day. Since pancakes are our favorite breakfast we started experimenting with different gluten-free pancake recipes and after many trials here is the recipe that we came up with.

Gluten-free Pancakes

1 cup rice flour
1/4 cup tapioca flour
1/4 cup potato starch
1/4 cup sugar
4 Tablespoons vanilla sugar
1 Tablespoon baking powder
1/2 teaspoon salt
1/2 teaspoon xantham gum
2 eggs
4 Tablespoons canola oil
2 cups milk
cooking spray

Mix together dry ingredients, flours, potato starch, sugars, baking powder, salt and xantham gum. Slowly add eggs, oil and milk while stirring. When the batter is thick, with just a few lumps and can be poured you have the right consistency.
Spray a griddle or frying pan with cooking spray. Pour 1/4 cup batter on hot surface. Flip when you start to see bubbles around the edges.

Serve this on a nice tray with gluten-free maple syrup and butter. Add hot coffee and see your Dad smile on Father’s Day.

    Can I substitute a bit more sugar and some vanilla extract for the vanilla sugar? Can’t wait to try this recipe.

    Of course, Tehara. Or you can make your own vanilla sugar. Some sugar with a vanilla bean in a airtight container… perfection. Look up exact amounts but it’s not difficult. You can find it easily in most stores and the flavor is superior to extract.
