Gluten-Free Banana Cream Pie

Last week I found this great recipe for banana cream pie on the Jell-O website that I easily adapted to the gluten-free diet.  It’s easy (those are the only kind I make), fun to do with kids, and a great way to get them to eat their bananas (if they don’t pick them out when you are not looking)!
The recipe calls for a graham cracker crust. There are several gluten-free crust options out there.  Kinnikinniks makes gluten-free graham cracker crumbs that could be made into a graham cracker crust by combining it with melted butter or margarine and pressing it into the pan.  You can also make your own crust by mixing 1 1/2 cups of gluten-free flour, 1/2 cup of melted margarine, and 1/2 cup of brown sugar.  Spread the mixture evenly in a pan and bake for 20 minutes.  After the first 10 minutes of baking you should mix up the mixture a bit and re-spread it for more even browning.
Once you have your crust the fun can begin:
Gluten-Free Banana Cream Pie

1 sliced banana

2 cups cold milk

2 pkgs Jell-o vanilla flavored instant pudding
1 cup of Rich’s whipped topping
Arrange the banana slices on the bottom of the crust.
Pour milk and the mixes into mixing bowl and beat for two minutes.
Stir in the cup of whipped topping and refrigerate.
If you wish you can drizzle the top with caramel syrup before serving.

    Hi Jen,

    I’m allergic to milk. Do you know if the Instant Jello Vanilla pudding will work correctly using rice or soy milk?
