Gluten-Free, Egg-Free, Dairy-Free, Nut-Free Fudge

I spent over an hour making caramel squares this weekend.  I had found the recipe in a gluten-free cookbook and I was thrilled to see that it was an egg-free recipe.  I made it my pet project for the morning and  boasted to my kids that they would have the yummiest treat that afternoon.  I really got their hopes up too.  The only one I couldn’t convince was my husband who has heard me boast like this before and knew better…

Well, needless to say it didn’t quite taste right.  My husband said the crust tasted like a bar of margarine (which is essentially what it was).  I felt like the crust had an interesting margariney-sandy blend, but, even so, it wasn’t that appealing.  My kids loved it though, because I let them lick the melted white chocolate chips off the top and throw out the crust.  Another smashing gluten-free, egg-free recipe success!

I have to admit there are days that I just lose hope.  So far my best gluten-free, egg-free dessert hands down is … Jello with Whip Cream.

As he was grimacing over my caramel squares and watching the kids lick off the melted white chocolate, my husband made a good suggestion.  “What you need is a good gluten-free fudge recipe.  There’s no crust in fudge!”  So last night I began my quest for a fudge recipe.  It couldn’t be just any fudge recipe.  It had to be a gluten-free, nut-free, dairy-free, egg-free recipe.  I started with my trusty gluten-free cookbook (yes, the one that gave me the caramel squares recipe) but I came up empty.  So I did a Google search, and guess what?  I found one!  Well… not exactly.  I found a very simple recipe for gluten-free fudge at http://www.recipezaar.com/Gluten-Free-2-Minute-Fudge-183795 and I adapted it to suit my allergy-laden family.  So here is the allergy friendly version:

4 c. powdered sugar
1/4 tsp. salt
1/2 c. cocoa
1/4 c. rice milk
1 tbl. of vanilla
1/2 c. margarine

Mix the first five ingredients in a microwaveable dish until they are partly blended.  Put margarine on top of the mixture and put it in the microwave for 2-2 1/2 minutes.  Mix until smooth and pour into a greased 8 inch square dish.  Let it chill for an hour before serving.  Store the fudge in the refrigerator.

…and PRESTO!  Gluten-Free, Dairy-Free, Egg-Free, Nut-Free Fudge, or as I prefer to call it:  Fudge Can-Do

    Does it have to be rice milk, or could soy milk also be used? I would love to make this, but I’m not really a rice milk person, and would hate the waste a whole carton of milk just for a little fudge.

    I made this recipe for Christmas Day with my 9 year-old daughter in mind. She was diagnosed with a dairy allergy in October, and we’re still learning her likes/dislikes. Well, she absolutely LOVED the fudge, as did everyone else!! Thanks so much for posting, and for giving my daughter a delicious dairy-free treat for the holidays!!
