Gluten-Free Honey Mustard Chicken and Vegetable Skewers

Spring is here, gorgeous vegetables are filling the markets and the barbecue is calling my name.  This easy to prepare, gluten-free main dish is a smash hit with my picky family.  The presentation makes all the difference. I can serve the same chicken and vegetables without the skewers and no one will touch it but add the skewers to the picture and they get eaten in no time.  The simple gluten-free marinade is delicious and easy to prepare. Although this gluten-free chicken recipe calls for grilling outside, it can easily be made inside under the broiler. Enjoy!

Gluten-Free Honey Mustard Sauce:

1/4 cup honey

1/4 cup gluten-free mustard

1 teaspoon fresh lemon juice

1 teaspoon granulated garlic

4 boneless, skinless chicken breasts cut into 1 inch chunks

Zucchini, red pepper, yellow pepper, onion (red or yellow), cut into 1 inch pieces

1/4 teaspoon salt

1/4 teaspoon pepper

Soak 8 wooden skewers in water.

Mix the sauce ingredients together.

Heat the grill.

Sprinkle the salt and pepper over the chicken.

Thread the chicken and vegetables onto the skewers, alternating between chicken and vegetables.

Brush chicken and vegetables with sauce.

Grill 6 minutes on each side until chicken is cooked through.
