Gluten-Free Peanut Butter Cookies

It is always nice to have a simple and easy gluten-free dessert recipe on hand.  The great thing about these cookies is that the ingredient list is so short. So many gluten free recipes (like the Gluten-free tortillas in my last post) have long lists of ingredients including gluten-free specialty items which require advance planning and shopping. The ingredients in these cookies are always in my pantry so I can make them on the spur of the moment. Of course they are gluten-free and taste great too!

Gluten-Free Peanut Butter Cookies

1 cup peanut butter

1 cup sugar

1 egg, beaten

Preheat oven to 350 degrees. Mix together the peanut butter, sugar and egg with a spoon. Place small round balls of the batter on a cookie sheet.  Press down with a fork to create lines or press down twice with a fork in different directions to create a criss-cross pattern. Bake for 10 minutes. Let cookies cool before eating.

Update: Thanks to commenter mj for pointing out the original source for this recipe, Bette Hagman’s cookbook. I have been making it for a while as it had been passed on to me  from a friend via a different friend. The irony is that the recipe that I received was slightly different so it seems that I modified it back to the original.

    These have been THE peanut butter cookie in my family for generations. I make them in a mini muffin tin and pour melted chocolate on the tops. YUMMM

    I, too, have been making this recipe for years and love it! I add mini chocolate chips to the dough for a twist on the flavor.

    Hi MC, Peanut Butter doesn’t contain gluten – always check labels as it may be produced in a factory WITH gluten products. I like the organic varieties. Much healthier. Now remember, if you are looking to lose or maintain weight, peanut butter is high in calories. Watch how much you consume! Another option that is VERY good, is Almond Butter to replace peanut butter. Talk about health and good. :) Try it and let me know what you think. ~J.
