Egg-free, Gluten-free, Dairy-Free Lemon Pie Filling

November 13th, 2009Gluten-Free RecipesWith my son’s egg allergy and the lack of eggs in my house, Energ-E egg replacer is an essential ingredient. It holds most cakes and cookies together nicely. It doesn’t really work in quiches as well. It doesn’t give body to food the way eggs do, but it does serve as an excellent binding agent when eggs are not an option. When my daughter was diagnosed with celiac disease and I had to throw away so many basic ingredients that lined my pantry, I was pleasantly surprised to find that Ener-G egg rreplacer is gluten-free. To be frank, I don’t know what I would have done if it wasn’t!
But Ener-G egg replacer is more than just a great replacement for eggs. It is also a great source for recipes! On the back of the box they list some fantastic recipes that are egg-free and many are also gluten-free. Their lemon pie filling is a great example of a dessert that is safe for my entire family (egg-free, gluten-free, dairy-free) and delicious as well. Here is their recipe:
Egg-Free, gluten-Free, dairy-free Lemon Pie Filling
1/4 cup Ener-G egg replacer
1/4 tsp. salt
1 cup sugar
1/3 cup lemon juice
1 1/2 cups hot water
2 Tbl. lemon rind
gluten-free pie shellPut egg replacer, sugar, and salt in a double boiler and stir until well blended.
Add water, lemon juice, and rind and continue stirring until thick and smooth (use a rubber spatula).
When pie filling mounds when dropped from spatula, remove from heat.
stir and cool for 15 minutes then pour into pie shell.
Refrigerate 2 hours before serving.This dessert is not as simple as the sorbet recipe I posted at the beginning of the week, because you do need to stand over the stove and stir. But if you have a lemon tree in your backyard as we do, this recipe can be a lot of fun. Get the kids involved by asking them to get you some lemon rind from a lemon they pick from the tree. Just remember to wash the lemon before you grate off the rind.

That rich should be.
The truth is that if difficult cooking gluten add not to use egg, is not easy, but as we are supermamas it we all, as I say my children.
I have two children and is the small the celiac, but the biggest is positive genetico, time has not developed the disease and anyway we eat practically all without gluten is more easy to do one meal to two or three.
I take note of your recipe.

Can you use this as a base to a meringue pie? This would be great for our whole family as my husband eats low fat and most lemon fillings have egg yolk
