Gluten-Free Egg-Free Holiday Recipes

It’s holiday season and mom’s all over are clamoring for new holiday recipes. Particularly those overworked and under-appreciated Gluten-Free moms who have to battle with cakes that won’t hold together, cookies that don’t take the proper shape, and muffins that taste like sand. Hungry anyone?

In my digging I have uncovered some great Gluten-Free Egg-Free holiday recipes that your kids will devour. As both Christmas and Hanukkah fall out in December I have decided to share recipes for both special days. Traditionally on Hanukkah Jewish people eat potato pancakes fried in oil. Fortunately for those who are allergic to eggs there is an egg-free version that holds together well and tastes just as good as the egg-laden version. Equally fortunately for the gluten-free eater that recipe can be adapted to gluten-free cooking:

Gluten-free Egg-Free Potato pancakes

3 pounds of potatoes
1 onion, chopped
3 tsp. rice flour
1 tsp. baking powder
3 tsp. egg replacer + 4 TBL. water (equivalent to 2 eggs)
1 tsp. salt
1/2 tsp. pepper
oil for frying

Grate the potatoes by hand or in food processor.
Add the remaining ingredients (except oil).
Heat a few Tbl. oil in frying pan and drop small amounts of potato mixture into pan to form pancakes.
Cook the pancakes on one side until browned and flip over to cook second side.
Serve warm with applesauce.

For healthier variations add grated carrots or zucchini to the potato mixture.

And now for the gluten-free egg-free Christmas cookies. These are a great example of gluten-free cooking that is both easy and fun to make with kids.

1/2 cup confectioner’s sugar
1/2 cup cornstarch
3/4 cup butter
1 cup rice flour

Sift cornstarch, rice flour, and sugar together.
Add butter and mix ingredients together by hand until you form a soft dough.
Refrigerate for 1 hour.
Shape the dough into 1-inch balls, lay out on greased cookie sheet and flatten slightly with a fork.
Roll in sprinkles or Cinnamon and sugar mixture.

Bake at 300 for 20-25 minutes.

    Gluten Free Quick Chia Flour Muffins

    A basic recipe

    Ingredients

    1 cup Nuchia Original Chia Seed Flour
    2 ½ tsp Baking Power
    1 Tbsp of sugar or other sweeter
    1 egg
    ½ Tsp salt
    ½ cup water

    Directions: Mix all ingredients together, and then spoon equal amounts into muffin pan. Bake at 375 degrees for 25 to 35 min. or until brown.

    Option 1: Add nut or berries, and additional sweeter t taste
    Option 2: Top with butter and cinnamon
