One of the biggest challenges of being a parent with a child that has celiac disease is coming up with gluten-free desserts that the whole family can enjoy. Often the gluten-free cakes and cookies have a different consistency that my non-celiac children complain bitterly about. Sometimes I think it’s easier to stay away from gluten-free baked goods and fall back on desserts that are naturally gluten-free. Fruit might work in some families (the ones with healthy eating habits), but not mine. Believe it or not, my oldest son is allergic to most fruit (funny, I never hear him complain about that particular allergy). Ices, sorbets, and ice creams are other excellent alternative desserts that are gluten-free. I found this great sorbet recipe a couple of years ago and my kids love it! It’s easy to make and tasty enough to serve to guests. And it has orange and pineapple juice in it (two allergies my son does not have), so I can sneak fruit into their diets without them knowing!
Gluten-free Sorbet recipe
1 cup water
1 cup sugar
1 pkg. Jell-O (We usually use cherry, but any flavor will work.)
1 cup orange juice
1 cup pineapple juice
1 container Rich’s whip
Boil water and sugar.
Add Jell-O, orange juice, and pineapple juice.
Freeze until slushy.
Add Rich’s whip, mix, and freeze.
Enjoy!
