If there is one thing that gluten-free eaters need to learn to embrace it is rice. As all gluten-free moms know, rice is in just about every recipe you make. It appears in every possible form: brown rice flour, white rice flour, rice puddings, rice and beans, rice in soup, rice in stuffing, rice in meatballs, rice with vegetables, Rice Krispie treats, and the old standby…rice cakes! So I have decided to dedicate this blog to my favorite rice recipe.
This rice recipe has peppers, onions, carrots, and chicken wings making it a fantastic healthy side or even main dish.
1-2 onions
1 red pepper
2 large carrots (sliced or shredded)
1 package chicken wings
1 C. rice
1 tsp. gluten free chicken soup mix (optional – I have made this recipe without it and it is still very tasty)
1/4 tsp. pepper
1 tsp. salt
2 C. water
Saute’ cut up peppers, onions, and carrots.
Add chicken wings to the saute’ed vegetables and cook on low flame for 1/2 hour.
Add rice, spices and water.
Bring to boil and simmer until done.
It’s as easy as that and it is absolutely delicious!
