Looking for some easy gluten-free dessert recipes? With all of the food allergies in my family I am usually reduced to serving Jello and whipped cream for dessert. But recently I stumbled upon a couple of other easy gluten free desserts that are safe for my entire family. Here they are:
Gluten-Free Apple Crisp
4-5 peeled and sliced apples
1/2 cup margarine
1 cup of gluten-free baking mix (I use rice flour, potato starch and tapioca starch)
3/4 cup light brown sugar
1 1/2 tsp. cinnamon
Arrange the sliced apples in a baking dish.
Crumble margarine, gluten-free mix, sugar and cinnamon by hand. Don’t over do it. You want it to be crumbled, not mashed.
Sprinkle the topping over the apples and bake at 350 degrees for 35 minutes.
Here is another easy favorite:
Chocolate “Rice Krispie” Treats!
1/4 cup margarine or butter
12 oz. chocolate chips
10 oz. bag of marshmallows or mini marshmallows
6 cups gluten-free “rice krispies”
Microwave margarine, chocolate chips, and marshmallows on high for 2-3 minutes.
Mix and then add the gluten-free “rice krispies”. Mix well.
Pour into greased 9×13 pan. When cool cut into squares.
